At the helm of Les Augustins restaurant, Chef Jayson Clément embodies an honest, heartfelt, and committed approach to cuisine, true to the brasserie spirit. He champions homemade dishes without frills, where each ingredient is carefully highlighted in a seasonal and zero-waste mindset. His signature dish, Flemish carbonnade slow-cooked with beer blossom, perfectly reflects this philosophy: precise slow cooking, balanced sauces, and bold, authentic flavor.
